LONDON, England — The chef at a London restaurant has made a splash on the culinary scene by adding squirrel meat to his menu.

Ivan Tisdall-Downes, the chef at Borough Market restaurant Native, said he is catering to customers in search of “sustainable” proteins with a lasagna made with squirrel meat.
