Venango County Recipe of the Day: Sausage and Sauerkraut

Make Sausage and Sauerkraut for your New Year’s Day meal; many people consume this meal in the hopes of a wealthier new year!

Sausage and Sauerkraut


4 medium potatoes, peeled and cubed
2 tablespoons canola oil
1 small onion, halved and sliced
1 pound smoked sausage, cut into 1/4-inch pieces
1 – 16 oz package sauerkraut, rinsed and well drained
1/4 teaspoon pepper
1/8 teaspoon salt


~In a large skillet, saute the potatoes in oil for 5-6 minutes or until lightly browned.

~Stir in onion; saute for 3-4 minutes or until tender. Add the sausage, sauerkraut, pepper and salt.

~Cook, uncovered, over medium heat for 4-5 minutes or until heated through, stirring occasionally.

~Makes four servings.
