Venango County Recipe of the Day: Cheesy Corn Casserole

Cheesy Corn Casserole


1/3 cup chopped green pepper
1/3 cup finely chopped onion
3 tablespoons butter, divided
1/4 cup all-purpose flour
1 regular size can cream-style corn
1/2 teaspoon salt
1/8 teaspoon pepper
1 – 3 oz. package cream cheese, cubed
1 regular size can whole kernel corn, drained
1 – 4 oz. can mushroom stems and pieces, drained
1/2 cup shredded Swiss cheese
1-1/2 cups soft bread crumbs


~Preheat oven at 400°.

~In a saucepan, saute green pepper and onion in one tablespoon butter until tender. Stir in flour, cream corn, salt, and pepper until blended. Add cream cheese and stir until melted. Stir in the whole kernel corn, mushrooms, and Swiss cheese.

~Transfer to a greased 1-1/2-qt. baking dish. Melt remaining butter and toss with bread crumbs. Sprinkle over the corn mixture.

~Bake, uncovered, for 20 to 25 minutes.

~Makes six servings.
