Venango County Recipe of the Day: Apple Oatmeal Bites

Apple Oatmeal Bites


2 egg whites
1/4 cup fat-free milk
2 tablespoons canola oil
1/2 teaspoon vanilla extract
2 cups quick-cooking oats
1/2 cup all-purpose flour
1/4 cup sugar
1/4 cup packed brown sugar
1 teaspoon ground cinnamon
1/2 teaspoon baking powder
1/2 teaspoon salt
1/4 teaspoon ground nutmeg
1 cup chopped peeled apple


~In a large bowl, beat the egg whites, milk, oil, and vanilla.

~Combine the oats, flour, sugars, cinnamon, baking powder, salt, and nutmeg; gradually add to egg white mixture and mix well. Stir in apple.

~Drop by tablespoonfuls two inches apart onto baking sheets coated with cooking spray. Bake at 350° for 10 to 12 minutes (or until bottoms are lightly browned). Remove to wire racks.

~Makes about 2-1/2 dozen.
