Venango County Recipe of the Day: Aunt Ruth’s Baked Corn Casserole

This recipe makes a perfect compliment to any meal!

Aunt Ruth’s Baked Corn Casserole

Ingredients

1 tsp. vegetable oil
1/2 cup onion — chopped
1/4 cup butter — softened
2 — 3 oz. pkgs cream cheese — softened
1 reg. size can whole kernel corn — drained
1 reg. size can creamed corn
1 — 8 oz. pkg dry corn muffin/bread mix
1 — 2.8 oz. package French-fried onions — divided

Directions

~Preheat oven to 350 degrees. Grease an 8×8 inch baking dish.

~Heat oil in a small skillet over medium heat. Saute onion until translucent.

~In a large bowl combine butter and cream cheese. Stir in whole kernel corn, creamed corn, onions, and corn muffin/bread mix. Pour into prepared dish. Bake in preheated oven for 15 minutes.

~Remove from oven and stir in half of the fried onions; sprinkle remaining onions on top. Bake 15 minutes more.
