Venango County Recipe of the Day: Banana Brickle Muffins

Great for breakfast, or brunch, or serve as a snack!

Banana Brickle Muffins

Ingredients

2 cups all-purpose flour
1/2 cup packed brown sugar
1 tablespoon baking powder
1 cup mashed ripe bananas
1/2 cup milk
1/3 cup canola oil
1 egg
1 — 8 oz. package (brickle toffee bits, divided)

Directions

~Preheat oven at 350°.

~In a large bowl, combine the flour, brown sugar, and baking powder.

~In a small bowl, combine the bananas, milk, oil, and egg. Stir into dry ingredients just until moistened. Fold in 1 cup toffee bits.

~Fill greased muffin cups three-fourths full. Sprinkle with remaining toffee bits. Bake for 18-20 minutes.

~Cool for 5 minutes before removing from pan to a wire rack.

~Serve warm.
