Ruthie’s Blueberry-Banana Puff Casserole
Ingredients
1 tbsp. butter
1/3 cup all-purpose flour
3 tbsp. sugar, divided
1/4 tsp. salt
3 eggs, lightly beaten
1/2 cup milk
1-1/2 cups fresh blueberries
1 medium ripe banana, sliced
1/4 tsp. ground cinnamon
Directions
~Preheat oven at 400°.
~Place butter in a 9″ pie plate. Bake for four to five minutes.
~Meanwhile, in a large bowl, combine the flour, one tablespoon of sugar and salt. Add eggs and milk and whisk until smooth. Pour into hot pie plate.
~Bake for 10 to 12 minutes (until edges are puffed and golden brown).
~Meanwhile, combine blueberries and banana.
~In a small bowl, combine cinnamon and remaining sugar. Spoon fruit mixture onto casserole and sprinkle with cinnamon-sugar. Cut into wedges.
~Makes four servings.
