Dawn’s Rhubarb Cream Pie

Ingredients

1 tbsp. butter or oleo
4 cups rhubarb, cut in 1″ pieces
1 1/4 cups sugar
2 egg yolks, slightly beaten
1/4 cup cream
2 tbsp. cornstarch
1/8 tsp. salt
1 baked pie shell

Directions

~Melt butter in pan. Add rhubarb and one cup of sugar. Cook for 10 minutes or until rhubarb is tender, stirring frequently.

~Combine egg yolks and cream. Add remaining sugar, cornstarch, and salt. Add to rhubarb mixture and cook, stirring constantly until thick.

~Cool, then turn into pie shell.

~Enjoy!
