Venango County Recipe of the Day: Lori’s Apple-Walnut Cake

Lori’s Apple-Walnut Cake

Ingredients

3 tbsp. butter, softened
3/4 cup sugar
1 egg
1 egg white
1 cup vanilla yogurt
1/3 cup unsweetened applesauce
2 tbsp. canola oil
2 tsp. vanilla extract
2 cups all-purpose flour
1 tsp. baking powder
1/2 tsp. baking soda
1/2 tsp. salt
1-1/2 cups apples
2 tbsp. chopped walnuts
1 tbsp. brown sugar
1/2 tsp. ground cinnamon
1/8 tsp. ground allspice

Directions

~Preheat oven to 375°.

~In a large bowl, beat butter and sugar until crumbly. Add the egg, egg white, yogurt, applesauce, oil and vanilla and beat until smooth.

~Combine the dry ingredients. Add to butter mixture, beating just until moistened.

~Pour into a 9″ springform pan coated with cooking spray. Sprinkle with apples and walnuts. Combine the brown sugar, cinnamon, and allspice and sprinkle over top.

~Bake for 47-52 minutes. Cool on a wire rack. Run a knife around edge of pan to loosen. Remove sides of pan.

~Refrigerate.

~Makes 10 servings.
