Venango County Recipe of the Day: Lori’s Hearty Lentil Soup

Lori’s Lentil Soup

Ingredients

2 cups Progresso chicken broth
1 – 12 oz. can non-alcoholic beer
1/2 cup dried lentils, sorted and rinsed
1 medium carrot, sliced
1 medium celery stalk, chopped
1 small onion, chopped
1 fully cooked smoked Polish sausage, thinly sliced
1 tsp. dried basil leaves
1/8 tsp. pepper
2 tbsp. grated Parmesan cheese

Directions

~Heat broth, non-alcoholic beer, and lentils to boiling in a two-quart saucepan; reduce heat. Cover and simmer 20 to 25 minutes, stirring occasionally, until lentils are tender.

~Stir in remaining ingredients, except cheese. Heat to boiling; reduce heat. Cover and simmer 20 minutes, stirring occasionally.

~Sprinkle each serving with cheese.

~Serve with homemade bread!
