Maple Scones

Ingredients

1 cup rolled oats
1-1/2 cups all-purpose flour
1/2 tsp. kosher salt
2 tbsp. granulated sugar
1 tbsp. baking powder
2-1/2 tbsp. butter, cold
2 tbsp. maple syrup
1 large egg
1/2 cup half and half
1/2 tsp. maple extract
1/2 cup chopped pecans

For glaze:
1 cup powdered sugar
3-5 tbsp. milk

Directions

~Preheat oven to 425 degrees F. Spray a baking sheet with cooking spray.

~Place oatmeal in blender and pulse until the mixture becomes a ground meal. Place in a large mixing bowl. Add flour, salt, sugar, and baking powder. Cut in butter with a pastry blender.

~In a small bowl, whisk together maple syrup, egg, half and half, and maple extract. Pour into flour mixture and stir until combined. Do not overmix.

~Turn out onto a lightly-floured surface. Knead pecans into dough. Shape and flatten dough into an 8-inch round. Cut into 8 wedges. Place wedges on prepared baking sheet.

~Bake 13 to 15 minutes until the tops of the scones get lightly-browned.

~Cool on a wire rack.

~Prepare glaze: Whisk together sugar and milk until the mixture forms the consistency of a glaze that you can drizzle. Drizzle glaze over scones.

~Serve immediately.
