This recipe makes a wonderful dish for brunch!
Potato & Pepper Frittata
6 slices bacon, chopped
1 cup shredded potatoes
1/4 cup chopped onions
6 eggs, beaten
1 cup Mexican Style cheese
1/2 cup green pepper rings
~Preheat oven at 350°F.
~Cook bacon in medium nonstick ovenproof skillet 4 min. Drain.
~Add potatoes and onions. Cook 7 minutes or until crisp-tender, stirring frequently.
~Stir in eggs. Remove from heat. Top with cheese and peppers. Cover. Bake 20 to 25 minutes or until center is set.
