Ruthie’s Hearty Ham Salad
2 cups cooked ham – ground in a food processor
½ cup celery – minced
¼ cup sweet onion – finely chopped
1 teaspoon Dijon mustard
2 hard-boiled eggs – diced
2 tbsp. sweet pickle relish – drained
½ cup mayonnaise
~Combine all the ingredients in a large bowl.
~Refrigerate until chilled.
~Serve with crackers, pita chips, or on bread as a sandwich.
