Venango County Recipe of the Day: Sandy’s Pumpkin Spice Cookies

Sandy’s Pumpkin Spice Cookies

Ingredients

1 regular size pkg. spice cake mix
1/2 cup quick-cooking oats
2-1/2 teaspoons pumpkin pie spice
1 – 15 oz. can solid-pack pumpkin
1 egg
2 tbsp. canola oil
3 cups confectioners’ sugar
1 tsp. grated orange peel
4 tbsp. orange juice

Directions

~Preheat oven at 350°.

~In a bowl, combine the cake mix, oats, and pumpkin pie spice.

~In another bowl, beat the pumpkin, egg, and oil. Stir into dry ingredients just until moistened. Drop by heaped tbsp onto baking sheets coated with cooking spray. Flatten with the back of a spoon.

~Bake for 18 to 20 minutes. Remove to wire racks to cool.

Icing:

~In a bowl, combine confectioners’ sugar, orange peel, and enough orange juice to achieve desired spreading consistency.

~Frost cooled cookies.

~Makes about 2 l/2 dozen cookies.
