Sunshine Gelatin Mold
Ingredients
2 regular size pkgs. lemon gelatin
1 cup boiling water
1-quart vanilla ice cream, softened
1 — 11 oz. can mandarin oranges, drained
1 — 8 oz. can unsweetened crushed pineapple, drained
Directions
~In a large bowl, dissolve gelatin in boiling water. Whisk in ice cream until melted. Stir in oranges and pineapple.
~Pour into a 6-cup ring mold coated with cooking spray.
~Refrigerate for at least two hours.
~Unmold onto a serving platter.
