A delicious recipe for leftover hard-boiled Easter eggs?

Zippy Egg Salad

Ingredients

3 tbsp. mayonnaise
1-1/2 tsp. prepared mustard
1/8 tsp. salt
1/8 tsp. pepper
1/8 tsp. lemon juice
3 hard-cooked eggs, coarsely chopped
1 tbsp. minced green onion
Bread or crackers
Sliced tomato

Directions:

~In a small bowl, combine the mayonnaise, mustard, salt, pepper, and lemon juice.

~Stir in eggs and onion.

~Serve on bread or crackers; top with tomato.
