Venango County Recipe of the Day: Chicken & Rice Chowder

This hearty old-fashioned recipe is great for a rainy day.

Chicken and Rice Chowder


2 cup sliced fresh carrots
½ cup chopped onion
½ cup chopped celery
1 cup snapped green beans
½ tsp pepper
2 tbsp butter
3 tbsp flour
2 cans chicken broth
2 ½ cups cooked chicken – cut into chunks
1 package of ready-to-serve rice
¼ cup half-and-half cream


~In a large saucepan, sauté the carrots, onion, celery, beans, and pepper in the butter until tender. Stir in flour until blended. Gradually stir in broth. While stirring, bring to a boil for about three minutes or until thickened.

~Mix in chicken, cooked rice, and cream.

~Makes four servings.
